Can the blast chiller be used for preserving?
ILSA blast chillers are designed to start the preservation cycle automatically at the end of the blast chilling or freezing programme.
So technically speaking, at the end of the cycle, the product can be preserved inside the blast chiller but using the machine for preserving is not economical because it consumes much more energy than either a positive or negative chilled cabinet.
